1 bunch broccoli (about 1 lb), chopped
1/3 cup extra virgin olive oil
4 cloves garlic, minced (or 2 tsp jarred minced garlic)
12 oz Crystal Isle Bay Scallops
1/3 cup sun-dried tomatoes packed in oil, drained
Juice of 1/2 fresh lime
8 oz penne pasta, cooked and drained
Parmesan grated cheese

Directions:
Directions:
Place broccoli in a microwave dish with 1/4 cup water. Cover; cook on high 8 minutes. Do not drain. Stir-fry garlic and scallops in oil in a large skillet over high heat until scallops are cooked, about 1 minute. Add sun-dried tomatoes, broccoli with water, cooked pasta and lime juice; toss and cook for 1 minute on low to blend flavors. Salt and pepper to taste. Serve sprinkled with grated cheese.
