4 lb. baking potatoes, peeled & quartered
1/2 c. sour cream
2 eggs
1/3 c. milk
1/3 c. onion or chives, chopped
1/4 c. margarine
1/4 c. Parmesan cheese, grated
1 tsp salt
1/2 tsp pepper

Directions:
Directions:
Preheat oven to 350º F. Butter a 2 qt. baking dish.
Boil potatoes until tender.
Drain & mash.
Beat in sour cream, eggs, milk, onions, butter,
Parmesan, salt & pepper until smooth.
Spread 1/2 in the baking dish.
Mound remaining decoratively on top or transfer to a pastry bag
& pipe over.
Bake 30 min. until lightly browned.
