1 small chicken
1 T. vinegar
1 large chopped onion
4 carrots (peeled and sliced)
2-3 stalks diced celery
1-2 tsp minced garlic
salt and pepper
pinch cayenne pepper (red pepper)
homemade noodles

Directions:
Directions:
Place chicken in a heavy kettle. Add enough water to cover chicken and boil gently for one hour. Skim off foam as it cooks. Take chicken out and cool slightly .

De-bone and cool , saving meat. Put 1 T vinegar, skin, fat, and bones back into kettle and continue cooking covered for 1-2 more hours. Strain,saving broth. Dispose of bones and skin.

Put broth back in kettle with chicken meat, vegetables, cayenne pepper and garlic. Add salt and pepper to taste (it will take a lot of salt). Cook gently till vegetable are tender. Add homemade noodles, cover and simmer for about 20 min. till noodles are done.
