5 beaten eggs
1/2 c. chopped onions (can use green onions)
1/2 c. chopped red pepper
1c. mushrooms (use any kind you like)
1 chopped garlic clove or 1 tsp. dried garlic
1c. chopped ham, or bacon, or sausage
1/2 c. chopped tomato
1/2 c. chopped steamed broccoli
1c. cheddar cheese (or cheese of your choice)
2 T. olive oil
salt and pepper to taste

Using a large cast iron frying pan heated to med-high temp. add olive oil and all veggies. Saute until slightly tender. Combine beaten eggs and cheese and pour over veggie mix. Place in oven and bake for 15 min. or so at 400º. Serve with nice leafy salad and you have a full meal.
