6 cups water,
1 butternut squash,
2 medium sweet potatoes,
1/4 cup honey,
1/4 cup orange juice,
3 tbsp. butter,
1 tbsp. grated orange rind,
1 tsp. cinnamon,
1/4 tsp. nutmeg,
2 small Granny Smith apples,
1/2 cup toasted chopped walnuts

Heat oven to 350º. Peel, seed and cup butternut squash into 3/4 inch peices. Bring water to a boil in a large pan. Add squash and return to boil. Reduce heat and simmer for 10 minutes, drain. Peel and cup sweet potatoes and apples into 3/4 inch pieces. Place squash, apples and sweet potatoes into a greased 9x13 baking dish. In a small saucepan, combine honey, orange juice, butter, orange rind, cinnamon and nutmeg. Bring to a boil, stirring constantly. Pour over squash, potatoes and apples. Cover and bake for 30 minutes stirring occasionally. Sprinkle with walnuts before serving.

This dish takes some time, but it is worth the effort. While making this for Thanksgiving in 2009, I learned the hard way that the potato, apple and squash peelings would not all go down my garbage disposal.
