2 tbsp butter
1 onion, chopped
1 3/4 cup green scallions, chopped
1 1/2 cup potatoes, chopped
2 1/2 cup vegetable stock
1 1/2 cup light cream
2 tbsp lemon juice
salt & pepper

Directions:
Directions:
- melt butter in saucepan; add onions & scallions; cover & cook on very low heat for about 10 mins
- add potatoes & stock; bring to a boil; cover & simmer on med-low heat for about 30 mins
- allow to cool then puree soup in blender or food processor; put back in pan, add cream, salt & pepper
- reheat, stirring occasionally
- serve & sprinkle lemon juice
