1 package of dry yeast
1/2 cup warm water
1/4 cup salad oil
1 egg
3 cups sifted flour
2 tablespoon sugar
1-1/2 teaspoon salt

4 quarts of boiling water

Brush with egg wash:
2 egg yokes
2 tablespoons water

This uses a combination of broiling, boiling, and baking to finish the bagel.

Mix / rise / knead for 5 to 10 minutes.

Divide dough into 12 pieces. Roll each piece into a 9 inch strip. Dampen the ends and pinch together to make the bagel shape. Place 6 on a floured cookie sheet and set in pre-heated broiler 6" from heat source for 1-2 minutes until golden.

Drop the bagels into the rapidly boiling water, uncooked side down. Cook uncovered for 10-15 minutes. Remove with a slotted spoon or tongs and place uncooked side up on a cookie sheet. Bake 10 minutes at 400º.

Remove from heat and brush with egg wash. Return to oven for 5 more minutes or until crispy golden brown.

May sprinkle with coarse or seasoned salt.

This recipe requires a lot of steps but it's worth the effort. The result is a bagel waiting to be smothered in butter or cream cheese and enjoyed for breakfast with a cup of fresh coffee. Delicious!
