8 ounces Cream Cheese
1/2/ cup (1 stick) butter
1 pound white/lump crabmeat, picked over
1 small onion, finely chopped
Tabasco sauce, to taste
Garlic powder, to taste
Cayanne pepper, to taste
3 tbsp. white wine or sherry
1 tsp. Beau Monde seasoning
1 c. grated sharp Cheddar cheese (use or to stretch the recipe)

Melt the cream cheese and butter in the top of double broiler over simmering water. Add remaining ingredients and gently stir to combine. Heat through and transfer to chafing dish.

This can be made a day or 2 in advance and warmed up prior to serving. Be careful if transferring to chaffing dish, don't scorch. Goes great with quality crackers or toast points.
