2 tbsp Butter
1 tbsp olive oil
2 md red chiles, chopped
1 onion, peeled and chopped
1 crushed garlic clove
2 skinless, boneless chicken breast portions, sliced (or shredded)
1 tsp thyme
2 md potatoes, unpeeled and diced
1 1/2 c. corn
5 cups chicken stock
1/2 c heavy whipping cream

Directions:
Directions:
Heat the butter and oil in a large pan. Cook the chilies, onions and garlic over medium heat for 5 minutes. Add the chicken and cook until colored.

Add the thyme, potatoes, corn, and stock and simmer for about 20 minutes.

Pour into warm serving bowls and top with a swirl of cream.

I will sometimes make this soup in a larger quantity early in the day and let it simmer for a few hours until dinnertime. If you want it a little more spicy, it is also good with added jalepenos, cayenne pepper and roasted red pepper.
