1/4 cup (50ml) olive oil
3 cloves garlic, very thinly sliced
1 lb (500g) extra large shrimp, peeled and deveined
2 tbsp (25ml) chopped fresh basil
1 tbsp (15ml) lemon zest
Sea or kosher salt and pepper, to taste
Lemon wedges, to server

1. Season the raw shrimp with salt and pepper
2. Heat oil in a large saute' pan on medium heat. Add the garlic slices and cook briefly until they are just starting to colour.
3. Turn up the heat to medium-high and add the shrimp to the pan. Cook for about 1 minute, turning frequently. Add the basil and lemon zest and cook for another 30 seconds. If the shrimps are opaque, they are done. They should not be over-cooked.
4. Serve immediately with lemon wedges and Balsamic Glaze (recipe below).
BALSAMIC GLAZE:
In a heavy saucepan, bring the vinegar to a boil then reduce heat and let simmer until reduced to 1/2 cup (about 30 minutes or so). It should be syrupy and thick. Stir in honey if using. Remove from heat and use.
