Directions:
Pre-heat saute pan on med-high heat. Skewer lemon wedge half with rind facing out and follow with fine shrimp skewered through head and tail of shrimp, making sure all face the same direction. Brush shrimp with garlic butter and grill 2-3 mins/side until cooked through, take care not to over cook. Drop pasta and pour scampi sauce and heavy cream into saute pan. Bring sauce to a simmer and reduce slightly until it reaches proper consistency. Add tomato and scallions, simmer 1 min. Drain pasta, toss in sauce and turn pasta out onto larger platter. Top with shrimp skewer, romano, parsley and serve.
