1.5 Mussels
4 oz. Scampi Sauce
2 oz. Heavy Cream
3 oz. Chopped Tomato
3 oz. Diced Red Onion
(8) 1/4 slices Baguette Bread
2 oz. Butter
1 tsp.+ Basil Leaves
1 tsp.+ Oregano Leaves
Chopped Parsley as needed

Directions:
Directions:
Heat large pan under med-high heat. Place baguette slices on baking sheet, drizzle with butter and sprinkle with basil and oregano. Bake in convection oven 7-9 mins until they begin to brown. While baguettes bake, add butter to pre-heated saute pan and saute red onion until it begins to carmelize. Add tomato, scampi sauce and heavy cream, bring liquid to simmer. Add mussels and cook in sauce until shells open and mussels are hot through. Poor into large salad bowl, place on large oval plate and place baguette slices on empty spaces of plate. Garnish with chopped parsley.
