8 medium potatoes
1/2 lb. bacon
1/2 cup chopped onion
3 to 4 T. flour mixed with 3 T. sugar
4 T. vinegar
salt and pepper to taste

Directions:
Directions:
Peel and chunk potatoes. Cook in water until slightly tender. Drain, saving the liquid. Fry the bacon and remove from skillet. Saute onions in bacon drippings. Make a roux with bacon drippings and flour-sugar mixture. Add enough potato water to make a thick gravy-like liquid. Add vinegar. Mix the crumbled bacon, onions and sauce to the potatoes, stirring gently. Serve hot.
