1 yellow cake mix
1 small box vanilla instant pudding mix
1 1/3 cups water
4 eggs
1/4 cup oil
2 cups Baker's Angel Flake Coconut
1 cup chopped walnuts or pecans

"Coconut-Cream Cheese Frosting"
4 T. butter
2 cups Baker's Angel Flake Coconut
1 - 8 oz. cream cheese
2 tsp. milk
3 1/2 cups sifted confectioners' sugar
1/2 tsp. vanilla

Directions:
Directions:
Blend cake mix, pudding mix, water, eggs and oil in large mixer bowl. Beat at medium speed 4 minutes. Stir in coconut and walnuts. Pour into 3 greased and floured 9-inch layer pans. (I use a 9X13 greased and floured pan). Bake 350º for 35 to 45 min. Cool.

Prepare frosting by melting 2 T. butter in skillet.
Add coconut; stir constantly over low heat until golden brown. Spread coconut on paper towels to cool. Cream remaining 2 T. butter with cream cheese. Add milk and sugar alternately, beating well. Add vanilla; gently stir in 1 3/4 cups toasted coconut. Spread on cake then sprinkle remaining toasted coconut on top.

My Mom (Lucille Brown) and my husband (Alfred Mann) always request this cake for their birthdays. I love it with chocolate ice cream!!!
