Ingredients: 4 one-inch thick tuna steaks olive oil kosher salt black pepper 3/4 lb. green beans 4 hard boiled eggs, peeled and cut in half 4 small tomatoes, cut into wedges romaine lettuce Vinaigrette: 3 Tbsp. champagne vinegar 1/2 tsp Dijon mustard 1/2 tsp kosher salt 1/2 tsp black pepper 10 Tbsp olive oil French potato salad: 4 large potatoes, scrubbed and cut in large chunks 2 Tbsp dry white wine 2 Tbsp vegetable broth 1/4 c. diced mild onion or scallions 2 tsp dill 2 tsp parsley 1 tsp basil

Directions:Grill or broil tuna. Brush with olive oil and salt and pepper. Steam green beans to desired doneness and set aside. French potato salad: Boil potatoes for approx 20 min., until just cooked through. Drain. In med. bowl add onions and spices and toss with wine and broth. Allow flavors to soak in. In a separate bowl add vinegar and olive oil, mustard and salt and pepper and whisk together for vinaigrette. Pour half over potatoes. Reserve the vinaigrette mixture for tuna and other vegetables on platter. On a large platter arrange romaine lettuce as a bed. In one corner place the potato salad, another corner the tuna steaks, and another the green beans. Add tomato wedges and eggs. Drizzle vinaigrette over everything and serve the rest in a pitcher on the side. Serve warm or at room temperature. |
