1 1/2c vegetable oil
1 1/2c flour
1 large onion, chopped
1 bell pepper, chopped
2 celery ribs, chopped
3-4 garlic cloves
8c turkey stock (made from carcass)
1lb andouille sausage or kielbasa, sliced 1/4" thick
salt and pepper (or cajun seasoning)
cayenne pepper
6c turkey
1/2c chopped green onions
1/2c minced parsley
hot cooked rice

Directions:

Combine the oil and flour over medium heat. Cook, stirring constantly until becomes a reddish-brown color, approx 30-40min. Be careful not to burn.

Add the onion, bell pepper and celery, stirring 5 min; add broth. Bring to a boil, stirring to incorporate the roux. Reduce heat and simmer for 1 hour. Add salt, pepper and cayenne. Add turkey and sausage and simmer an additional 30 min. Add the green onion and parsley. Serve over hot rice (or mix the rice in).
