3 TBsp flour (or 1 1/2 TBsp cornstarch)
2 TBsp butter
1 cup milk
1/2 tsp. salt
1/2 tsp sugar

3 beaten eggs
1TBsp parsley
1 TBsp lemon juice
1/4 cup chopped onion
1 can tuna

Directions:

Make a creamed sauce with the butter, flour (or cornstarch), milk, salt and sugar.

Melt the butter in a sauce pan, then put the flour in the melted butter. Mix it thoroughly and add your milk, sugar, salt. Mix in milk and cook until it is smooth, stirring constantly with a wire whip (preferably the springy kind) while thickening.

In a separate bowl, combine the eggs, parsley, lemon juice, chopped onion and tuna.

Mix with creamed sauce. Cook 30 minutes at 350º in buttered casserole dish.

This was one of my favourite meals when I was a kid, so when I got married I asked Mom to send me this recipe. My husband loved it!
