Ingredients:  
3 eggs
2 cups sugar
2 cups peeled and grated zucchini
2 teaspoons vanilla
3 cups flour
1 teaspoon soda
1/4 teaspoon baking powder
3 teaspoon cinnamon
1 teaspoon salt

Mix all ingredients together. Flour into 2 greased loaf pans. Bake at
350º for 1 hour test in center to make sure baked. You can add nuts or raisins if you want.
