1 1/2 c. oil
4 eggs
2 tsp. baking soda
3 c. grated carrots (pack firmly)
1 tsp. vanilla
2 c. sugar
2 c. flour
1 pinch of salt
2 tsp. cinnamon
Icing Ingredients:
1/4 lb. butter
1 lb. confectioner's sugar
8 oz. cream cheese
Pecans (whole, for decoration)

Directions:
Directions:
Beat oil and sugar, then add eggs. Add and mix other ingredients in the order given. Pour into (3) 9" inch cake pans. Bake at 350º for 35 minutes.
To prepare icing: Mix butter and cream cheese until smooth. Add sugar a little at a time. Beat until smooth. Add pecans all over the sides of the cake, for decoration. (I, also colored some of the icing and made decorative carrots on the cake top.)

Hannah says: "I won the Girl Scout Cake Baking Contest, for my troop and got to bake again at the City Girl Scout Bake-Off. This cake was my first cake to bake by myself. It really is very moist and delicious."
