3 lb. small Red or White New Potatoes
1/4 C. Olive Oil
1-1/2 tsp. Kosher Salt
1 tsp. ground Black Pepper
2 Tbsp. Minced Garlic (6 cloves)
2 Tbsp. minced fresh Parsley

Directions:
Directions:
Preheat oven to 400º
Wash the potatoes, pat dry with paper towel.
In a large bowl combine the Olive Oil, Salt, Pepper and Garlic, Cut potatoes in half or quarters and place in the bowl with the Olive Oil mixture; gently toss until the potatoes are well coated.
Pour the Potatoes onto a sheet pan and spread out into a single layer. Roast in the oven for 45 minutes to 1 hour, until browned and crisp. Flip twice with a spatula during cooking.
Remove the potatoes from the oven, toss with Parsley, season to taste and serve hot.
