12 ounce package tri-color Rotini pasta
1 pound skinless chicken breast (grilled or parboiled/cubed)
2 10-ounce can Rotel chopped tomatoes with hot chilies
1 cup French's French fried onions
1 cup low-fat shredded Mozzarella cheese
1 tablespoon butter
Salt to taste

Pre-heat oven to 350 degrees. Coat baking dish with 1 tablespoon butter. In oven, brown butter and add 1 cup French's French Fried Onions to cover bottom of dish. Reserve 2 tablespoons French Fried Onions to top casserole. Set baking dish aside. Grill or parboil 1 pound. chicken breast; cut into bite-sized pieces; set aside. Boil pasta as directed; drain and return to pot. In pot, mix pasta, chicken and tomatoes with hot chilies.
Place mixture in baking dish on top of French Fried Onions and top with Mozzarella and reserved French Fried Onions. Bake for 20-30 minutes or until cheese begins to bubble. Let stand for 10 minutes, salt to taste and ENJOY!

This is one of my "go-to" dishes for my family after a long and busy day! Easy to prepare and, with the multi-colored pasta, results in a pretty dish. I usually serve it with a garden salad and hot French bread. Milder chili peppers can be substituted.
