1 package active dry yeast (not fast-rising)
1/4 cup warm water (105 to 115 degrees)
2 tbsp. granulated sugar, divided
2 cups warm milk (110 to 115 degrees)
3 tbsp. dried minced onion
3 tbsp. prepared mustard*
2 tbsp. vegetable or canola oil
1-1/2 tsp. salt
6 cups all-purpose flour

Directions:
In mixing bowl, dissolve yeast in water and 1 teaspoon of the sugar. After yeast has bubbled, add milk, onion, mustard, oil, remaining sugar, salt, and 4 cups flour. Beat until smooth, and add enough remaining flour to form a soft dough.

Turn out onto floured surface and knead until smooth and elastic, about 6-8 minutes (or use dough hook in heavy-duty stand mixer to knead 6-8 minutes). Place in greased bowl, turning once to grease top. Cover and let rise in warm place until doubled, about 1 hour.

Punch dough down and divide into 16 pieces. Flatten each piece into a 3-1/2" round and place 1" apart on a greased baking sheet. Cover and let rise until doubled, about 45 minutes.

Bake on middle rack of an oven preheated to 350 for 20-25 minutes, or until golden brown. Cool on wire racks and slice to serve.

*Note: I used Inglehoffer stone ground mustard.
