1 duck, cut off bone in serving pieces
1/4 cup flour
4 slices bacon, cut up
1 chopped onion
3 stalks celery, chopped
1 cup carrots, chopped
1 14-oz. can diced tomatoes
1 bay leaf
Chicken Broth - about 2 cups

Directions:
Directions:
Preheat oven to 300º.
Flour duck.
Fry bacon; use drippings to brown duck.
Place browned duck in prepared casserole dish.
Saute onion, celery, & carrots until tender-crisp.
Gradually add chicken broth bringing to a boil; cook until thickened.
Pour over duck pieces; add tomatoes and bay leaf.
Bake at 300º for 3 hours.

My personal favorite duck recipe is simple: Wash and dry whole duck; season as desired;
Bake on wooden board until done.
