4 thin slices of beef, 5 oz each
2 slices bacon cut in half
2 medium onions
1 large pickle, cut in 4 length wise
1 tbsp mustard
2 tbsp flour
2 tbsp oil
2 oz red wine
salt and pepper to taste
pinch of thyme
gravy to cover meat

Directions:
Directions:
Slice onion, saute in a little hot oil until transparent but not brown.
Remove from heat & mix with mustard. Let cool.
Spread out meat, roll quarter of pickle in half slice of bacon, place on upper half of meat.
Spread on quarter of onion mixture & roll up tightly with tooth pick or string.
Season with salt & pepper, dredge with flour & fry in hot oil until brown.
Transfer meat to casserole dish, reserving oil in frying pan. Sprinkle thyme over meat. Add red wine to frying pan, bring to a boil & strain over beef rolls.
Cover with gravy & place in oven for 45 minutes at 350º or until tender.
