4 salmon fillets
4 phyllo pastry sheets
1 Tab. Lemon juice
2 shallots
2 egg yolks beaten
1 cup whipping cream
1 cup sparkling champagne

Directions:
Directions:
Take phyllo sheets and put the salmon in them. Sprinkle with drops of lemon juice and small pats of butter. Bake in oven at 400º for 18 minutes. Careful not to over cook.

Sauce
Sauté shallots. Beat eggs yolks and cream together. Heat carefully and add shallots. Whisk until slightly thickened. Add champagne at room temperature. Serve warm over salmon. Pour a little sauce on the plate and the. Pass the rest.
