Ingredients: 4 potatoes peeled and cut small. 2-3 cups corn 1 onion 1 bay leaf 3 tablespoons chicken stock mix 1/2 teaspoon thyme 1/2 teaspoon salt Approx. 4 cups of water 1/2 cup margarine or butter 1/2 cup flour 4 cups milk garlic/Italian sausage

Directions:Simmer the first 8 ingredients in a pot for about 20 min. (until potatoes start getting soft). Remove bay leaf and mash with potato masher or hand blender to get soup a smoother consistency. Melt the margarine or butter in a saucepan and quickly add the flour mixing well. Add the milk and cook until thickened (using a wire whisk to minimize clumps forming). Add this to the corn mixture and heat together. Add sausage and additional seasonings to taste (I cook it on low for a couple of hours to get the flavors to their best). |

Notes: This is a great recipe to cook when it is cold out and you need something to warm you from the inside out! Enjoying it with fresh buns is the best. Plus it is hard to beat the smells that come out of your kitchen. It also freezes but the consistency looks a little funny due to the milk but the taste is the same.
