Tomato Sauce:

- Large (28oz) can of ground and peeled tomatoes
- 2 tablespoons of olive oil (sufficient to cover bottom of pot.
- 1 clove of garlic, minced
- Water (roughly ½ volume of ground and peeled tomatoes can)
- ½ teaspoon of salt or to taste
- ¼ teaspoon of ground black pepper or to taste
- 2 Bay leaves

Breadcrumb Stuffing:

- 2 cups plain bread crumbs
- 2 small cloves of garlic, minced
- 2-3 tablespoons of Parmesan cheese
- Olive oil, enough to make stuffing granular when mixed with breadcrumbs (4-5 tablespoons)

Stuffed Calamari Bodies:

- 12 cleaned calamari bodies
- (Stuffing from procedure above)

Tomato Sauce:

- Saute above ingredients (excluding tomatoes and water) in a 8qt until the garlic is wilted. Careful to not burn the garlic.
- Add tomatoes and water. Simmer on low until the ingredients’ flavors have combined, roughly 30 minutes or longer.

Breadcrumb Stuffing:

- Combine above ingredients in a bowl and mix until stuffing is a granular texture. Adjust using addition breadcrumbs or olive oil if too wet or dry.

Stuffed Calamari Bodies:

- Rinse calamari bodies under cold running water.
- Loosely pack calamari bodies with stuffing to 50% full or less. Need to leave room in the calamari bodies for the stuffing to expand, else the bodies will burst when cooked.
- Secure the open ends of the calamari bodies with a wooden toothpick to prevent stuffing from bursting or falling out during cooking.
- Add stuffed calamari bodies to the tomato sauce from above and simmer on low heat until tender, approx. 10 minutes.
- Serve over 1 pound of your favorite pasta. Uncle Robert prefers thin spaghetti, linguini, or capellini.

This is my all time favorite pasta dish. Though it's time consuming to prepare, buying previously cleaned calamari bodies eliminates the effort associated with cleaning the squid bodies if purchased whole.
