- 1 pound of pasta (Rigatoni or Ziti are preferred)
- 1 pound of broccoli flowerets
- ½ pound of salt pork, cubed
- 4 tablespoons olive oil
- 2 cloves minced garlic
- ½ teaspoon black pepper
- 1 tablespoon salt

Directions:
Directions:
- Sauté salt pork in a skillet with garlic and olive oil until golden. Careful to not burn garlic.
- Add water to 8-quart pot and add 1 tablespoon of salt. Bring to a boil.
- Add pasta and broccoli to boiling salted water, and cook according to instructions on pasta box.
- When the pasta has completed cooking, drain ¾ of water into separate bowl, reserving for later steps.
- Add oil, garlic, and salt pork mixture to the pot containing the pasta and broccoli. Mix.
- If necessary, add more of the reserved pasta water to pot if the sauce is not sufficiently moist.
- Serve hot with crushed red pepper, if to your liking.

This is a fairly simple dish that I don't recall seeing anywhere but in our family. My folks used to make it regularly, and though simple, it is one I enjoy very much. It also reheats pretty well, though you must be careful it's not too dry when you store it.
