1 head red cabbage (3 lbs.)
1 red onion (1/2 lb.)
1 c. shredded peeled apple
1/2 c. red wine vinegar
1/3 c. red currant jelly
2 T. butter
1 t. salt

Directions:
Directions:
Rinse cabbage, cut it in half through the core and trim off the core and discard. In a food processor, shred cabbage. Peel and thinly slice the onion. In a 6-8 qt. stock pot combine 3 1/2 c. water, cabbage, onion, apple, vinegar, jelly, butter and salt. Cover and cook over medium heat, stirring occasionally, until cabbage is very limp about 1 1/4-1 1/2 hours. If mixture begins to stick, add water 1/2 c. at a time. If any liquid remains after cooking time, uncover and cook until water is evaporated. Add salt to taste. Serves 10-12.
Note: Serve with Konigsberger Klops and warm German potato salad for a German dinner.
