1 lb. ground beef
1 small onion (chopped)
1 tsp. chili powder
15 oz. can chili beans
8 oz. tomato sauce
6 oz. cheddar or Colby/jack cheese (grated)
2 c. corn chips (fritos)
10 oz. enchilada sauce
8 oz. sour cream

Directions:

In a skillet, brown the ground beef with the onion and chili powder, drain any grease off. Stir in the beans, enchilada sauce, tomato sauce, 1 cup cheese, and 1 cup corn chips (crushed). Pour into casserole dish, cover and bake at 375 degrees for 30 minutes. Remove from the oven, stir it, and then spoon the sour cream in the center and sprinkle the remainder chips on the outer rim. Sprinkle the remaining shredded cheese over the whole casserole. Return it to the oven (uncovered) for a couple more minutes until the cheese is melted.

This was the first meal I made. I think I was 12 years old. I was so excited everyone liked it. It became a regular on my family's menu. I use block cheese and grate it, versus buying the packaged shredded cheese. I think it makes a big difference in taste.
