4 lbs bottom sirloin or center cut crossribs
1 carrot (peeled & sliced)
1 sliced onion
2 stalks sliced celery
1 cup red wine vinegar
4 cup water
2 tbsp pickling spices
2 tbsp salt
2 tbsp paprika
1 can tomato puree (2 cups)
Flour
1/2 cups currants

Directions:
Directions:
Brown meat in skillet. Cool. Combine carrots, onion, celery, vinegar, water, pickling spices and salt in large pan. Add cooled meat and let stand in refrigerator covered for 4 days.

Transfer meat and marinade into large cooking pot, add paprika and tomato puree. Bring to boil and simmer covered until meat is tender. Strain off juice and thicken with flour to desired consistency. Stir in currants. Serve over thinly sliced meat.
