2 each - 4 oz containers of Eggbeaters
1/2 c. sugar
1/2 tsp. vanilla extract
1 can Fat Free Eagle Brand condensed milk
2 cans Fat Free Carnation evaporated milk
2 pkgs Jello Vanilla Instant Pudding Mix
2 c. (plus additional as needed) skim milk

Beat Eggbeaters until fluffy. Add sugar and vanilla and continue to beat. Add Eagle Brand milk, evaporated milk and 2 cups skim milk while continuing to beat. Add the pudding mix and beat at least two more minutes. Pour mix into one gallon White Mountain ice cream freezer canister. Add additional skim milk to bring to only 2/3 full. Freeze with ice and salt (we use stock salt which is cheaper than ice cream salt). This ice cream is best when eaten shortly after freezing, but will keep for several days in the deep freeze.
