¾ cup ground flax meal
¾ cup total sweetener (half of this will be brown sugar or sugar; the other half will be Stevia* or Splenda.) See note below
3 very ripe bananas, mashed
½ cup applesauce – preferably all natural, no sugar added
¼ cup skim milk
¼ cup lowfat sour cream
1 small egg or 2 tsp egg whites
2 cups whole wheat flour**
1 Tablespoon wheat germ
1 tsp baking soda
½ tsp salt
1 tsp cinnamon (or less to taste)
½ tsp nutmeg

Directions:
Directions:
Preheat oven to 350 degrees. Grease a 9 X 5 loaf pan. Mix together the flax, sweeteners, bananas, applesauce, milk, sour cream and eggs until well blended. Combine the other dry ingredients in separate bowl and slowly stir into the banana mixture until moistened.
Spoon into prepared loaf pan. Bake for around 55 minutes or until a toothpick inserted into the loaf comes out clean.
* Stevia is preferred because it is an natural sweetener from the leaves of a plant. Splenda is produced through a process that adds
chlorine atoms to sugar.
** King Arthur brand makes a whole wheat flour which is very finely ground. It makes this bread a great texture. Some other whole wheat flours make it VERY dense, but still tasty. Makes one loaf
