8 slices cinnamon raisin bread
1 medium banana, thinly sliced
2 tbsp. brown sugar
2 eggs
3 egg whites
1 1/4 cup low-fat milk
1 tsp. vanilla
4 tsp. finely-chopped nuts (pecans or walnuts)

Directions:
Directions:
Spray non-stick cooking spray to pan that will fit 4 slices of bread.
Cover bread with a layer of banana.
Sprinkle half of the sugar over the bananas. Covr with remaining bread to make four sandwiches.
In medium bowl whisk together the eggs and egg whites until well-blended. Whisk in milk and vanilla.
Pour mixture over the bread and let sit for 5 minutes.
Turn over sandwiches. Cover dish with plastec wrap and refrigerate overnight, (or at least an hour.)

Preheat pven to 350º. Take bread from fridge. Combine nuts in small bowl with remaining tablespoon or sugar. Sprinkle over French toast.
Bake uncovered for 30 minutes, until toast is golden

This is handy for serving overnight guests as it's all ready to bake the next morning--just add nuts and sugar and put it in the oven.
