1/2 stick Butter
2 Tbs Corn Oil
1 Cup Uncle Ben's Converted Rice
1/4 Cup chopped onion
1/4 Cup chopped red pepper
1/4 Cup chopped green pepper
1/4 Cup chopped celery
16 oz Chicken Broth
4 cloves garlic, minced
1/4 Cup parsley, chopped
Salt, Pepper

Directions:
Directions:
Melt butter and oil in cast iron skillet on medium heat. Stir in rice and brown. Add garlic and mix. Add vegetables and mix. Add chicken broth and stir. Let the mixture come to a boil, cover and turn heat to simmer. When most of the juice has been absorbed by the rice/veggies (approx. 30 mins), lift the lid and add the parsley, salt and pepper. Re-cover and simmer for an additional 15 minutes. Delicious!
