½ cup oil
1 cup sugar
2 eggs, beaten
3-4 ripe bananas, mashed
2 cups flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ tsp vanilla
½ cup chopped nuts (optional)
3 TBS milk
¼ tsp cinnamon
1/3 cup sour cream

Directions:
Directions:
Beat oil and sugar together; add eggs, bananas and beat well. Add sifted dry ingredients, then milk, vanilla and sour cream and beat well. Stir in nuts.

Pour into well greased loaf pan and bake at 350 degrees for 1 hour (crack in center must test “done”).

Note: When our bananas get ripe, we throw them in the freezer. They will keep up to a month and give the recipe a smoother & sweeter consistency.
