1 lb. Fettuccine
4 tbsp. Butter or Margarine
1/2 c. Heavy Cream
1 Shallot, finely chopped
1 c. Ham (or Canadian Bacon or Proscuitto), chopped into small pieces
1 box frozen Peas
1/4 to 1/2 c. grated Parmesan Cheese
Salt and Pepper
Lemon Zest
1/4 c. White Wine

Directions:
Directions:
Bring large pot of salted water to a boil and cook fettuccine as per directions or until al dente.
In a large saute pan melt the butter and add the shallots. Saute for a few minutes until tender. Add the heavy cream and the white wine and mix. Add the chopped ham and frozen peas and saute until peas are tender. Add in the lemon zest.
Set 1 cup of the pasta water aside and drain pasta thoroughly.
Add the pasta to the saute pan and mix well. Sprinkle with the Parmesan cheese to your taste and mix well. Salt and pepper to taste. If the sauce is too thick add some of the pasta water to thin.
Serve immediately.
