1 stick butter (1/2 c.)
1 medium onion, chopped
1 carton sliced mushrooms
1/2 c. flour
3 c. chicken broth
3 c. milk (may sub half and half)
1 c. pulled rotisserie chicken (or any cooked chicken)
1 c. fresh broccoli, stems removed, cut into bite sized pieces
1 tbsp. rosemary
1/2 tsp. thyme
salt and pepper to taste

Heat Dutch oven over medium heat for 1 minute. Add butter, onion, and mushrooms. Saute until onions tender, about 4-5 minutes. Turn heat to Med-Lo and add flour. Stir continuously until it forms a paste. Gradually add chicken stock and milk. Turn heat to medium and add broccoli, chicken, thyme and rosemary. Bring to a boil, turn down to low, cover, and simmer for at least 30 minutes (the longer the better).

This soup is better the 2nd day. The longer it sits, the better it gets. This is a perfect meal with homemade biscuits on a cool day!
