3 lbs. chicken breasts, thighs and or legs,

2 Tbsp. olive oil,

2 large onions- chopped coarsely,

1 Tbsp. paprika,

1 tsp. salt,

1/2 tsp. black pepper,

3 c. chicken broth or boullion,

1 c. sour cream,

2 Tbsp. corn starch for thickening.

Heat oil in a large skillet. At medium heat, brown chicken on both sides until golden brown ( about 10 minutes on each side). Remove chicken to oven ready roasting pan. Add chopped onions and saute until they are translucent. Add paprika and seasonings. Stir and loosen all brownings from bottom of the pan: adding a bit of chicken broth, if necessary. Pour onion mixture chicken. Add broth, cover and simmer for 1 1/2 hours or bake for 3 hours at 200º. When done, mix corn starch with a bit of cold water (1/2 cup?) and add some hot broth from roasting pan to warm and thin corn starch mixture. Then add sour cream, combine and pour into roaster with chicken.

DUMPLINGS: Put a large pot of water on the stove to boil. In a separate bowl, combine 3 eggs, 1/2 c. water and 1 tsp. salt. Add enough flour to make a sticky elastic dough, usually about 2 c. This is most easily accomplished with an electric mixer. When the water comes to a boil, drop pea size amounts into the boiling water. When you have about 1/4 of the mixture dropped into the water, boil for 6-8 minutes. Remove from water, drain and put into a covered casserole or serving bowl. Continue until all dumplings have been prepared. ** Prepared dumplings and dried spaetzels can be purchased instead.
