1/2 cup sour cream
1 tsp. fresh cilantro, chopped
1/2 tsp. lime zest
Eggrolls:
1 tsp. oil
1/4 lb. chorizo, chopped
1/2 cup chopped onion
1/2 cup chopped red pepper
1 clove garlic
1 tsp. hot pepper sauce
1/2 tsp cumin
1/2 cup rinsed canned black beans
1 cup sharp cheddar cheese
won ton wrappers- about half of a 12 oz. pkg.

Heat oven to 425º.
Mix sour cream, cilantro and lime zest. Refrigerate until ready to serve.
Heat oil in skillet on medium high heat. Add all ingredients except beans, cheese and won tons. Cook 3 to 4 minutes until meat is done. Stir in beans; cool for 5 minutes. Add cheese, stir. Spoon about 1 tbsp. meat mixture in center of each won ton wrapper; roll up tightly. Place, seam side down on a baking sheet sprayed with cooking spray. Bake for 10 minutes, turning after 5 minutes. Serve warm with dipping sauce
