2 c. finely shredded sharp cheddar cheese
1 (8 oz) cream cheese
1 small garlic crushed (or garlic powder)
2/3 c. beer
1 T. poppy seeds
2 T. sweet pickle relish (optional)

Directions:
Directions:
Let cheeses stand at room temperature approximately 1/2 hour. Cream cheddar, add cream cheese and garlic and continue to cream. Add beer slowly and beat until desired consistency. Stir in poppy seeds and relish (optional). Keep in refrigerator.
Serve with crackers, pita bread or bread sticks.
