Flatten a beer of choice. Mix with pancake dry ingredients to a consistency to your liking. Coat desired fish/shrimp with batter and deep fat fry.

I've experimented with a variety of beers and pancake mixes. I've not had a bad one. The standard Aunt Jemima mix where you just add water (now beer) works great, but I have tried Krusteaz and others and they also work. I open a beer in the AM and let it flatten or open it shortly before use and flatten it in a glass mixing it with a fork. Guinness or other dark beers work well and are my favorite especially with halibut and shrimp. After experimentation you'll figure out how much beer to flatten for the batter batch size. One would not want to waste a drop and drinking flat beer used to work but not much any more. We mix our own easy cocktail sauce by combining ketchup and horseradish with a splash of lemon juice if you have it.
