1 stick butter
2 c. sugar
1 c. buttermilk
2 c. plain flour
1 c. coconut
1/2 c. shortening
5 eggs, separated
1 tsp. soda
1 c. pecans, chopped
1 tsp. vanilla
Frosting:
1 stick butter
8 oz. cream cheese
1 lb. powdered sugar
1 tsp. vanilla

Directions:
Directions:
Cream butter, shortening, and sugar. Add egg yolks, buttermilk, soda, flour, pecans, coconut, and vanilla. Whip egg whites to form soft peaks. Fold egg whites into cake batter. Pour into three 9 inch round pans that have been greased and floured. Bake at 325º for 35-45 minutes or until cake tests done. Allow to cool completely before frosting.

Frosting: Cream butter, vanilla, and cream cheese until creamy. Add sugar, slowly, until completely mixed.
