8 loin pork chops,

1/2 c. apple juice,

1/2 c. soy sauce,

2 tbl. cornstarch,

2 apples (Golden Delicious),

salt and pepper,

3 Tbl. ketchup,

1/2 c. brown sugar,

1/2 tsp. ginger

Directions:
Directions:
Bake chops with salt and pepper in single layer in roasting pan, uncovered foe 30 minutes at 350º. Turn chops over, Combine apple juice, ketchup, soy sauce, brown sugar, cornstarch and ginger in a sauce pan and cook over medium heat until thickened. Spoon juice from roasting pan into saucepan to thin it. Core apples, cut into rings. Place one on each chop. Pour sauce on chops. Bake 30 minutes longer. Baste several times.
