4 oz. fine quality bittersweet chocolate (not unsweetened)
1 stick unsalted butter (1/2 c.)
1 c. sugar
3 large eggs
1/2 c. unsweetened cocoa powder plus additional for sprinkling
1 tsp. vanilla

Directions:
Preheat oven to 375º. Butter one 8" round baking pan, line bottom with a round of wax paper and butter the paper.
Chop chocolate into small pieces. In a double boiler or metal bowl set over a saucepan of barely simmering water, melt chocolate with butter stirring until smooth. Remove top of double boiler from heat and whisk sugar into chocolate mixture. Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined. Pour batter into pan and bake in middle of oven for 25 minutes or until top has formed a thin crust. Cool cake in pan 5 minutes and invert onto a serving plate.

I confess - I have never made this! But, a friend of mine, Jill, made this for our wedding reception that we had at the Renton Community Center about a month after our wedding. The bitter sweetness of the chocolate matches the bittersweetness of the memories of the wonderful party and Jill wrecking her car on the way to it. The cakes and Jill made it unscathed - but the car was totaled!
