4 skinless, boneless chicken breast halves
1 Tbsp. butter
2 Tbsp. onion, chopped
2 Tbsp. chopped green chilies
8 oz cream cheese, diced
1 c. whipping cream
10 corn tortillas
1 c. cheddar cheese, grated
1 c. pepper jack cheese, grated
1 c. salsa

Directions:
Directions:
Cook chicken (bake, grill, boil) until done, and cube. Melt butter in a sauce pan. Add onion and saute until translucent. Add green chilies and cream cheese, and stir constantly until blended. Remove from heat and stir in chicken. Soften tortillas according to package directions. Place 3 Tbsp. of chicken in the center of each tortilla. Top evenly with cheeses and salsa. Roll up tortillas and place, seam-side down in a greased, 2 at casserole dish. Pour whipping cream over enchiladas. Top with remaining cheese. Bake @ 350º for 25 minutes or until hot and bubbly.
