1 cup long grain white or brown rice
4 slices bacon
1 tbsp olive oil
1 onion, chopped
1/2 cup dry white wine
3/4 cup heavy cream
1 1/4 lbs large shrimp, peeled and deveined
1 10 oz pkg frozen corn
salt and pepper

Directions:
Directions:
Cook rice according to directions.

Meanwhile, cook bacon in a large skillet over med-hi heat until crisp. Transfer to paper towel and let cool, then break into pieces.

Heat oil over med-hi heat and add the onion and cook, stirring occasionally, until softened. Add the wine and cook until reduced by half, 2 - 3 minutes. Add the cream and bring to a boil. Stir in shrimp, corn and 1/4 tsp each salt and pepper. Simmer until cooked through, 4 - 6 minutes.

Stir in the bacon and serve over the rice.
