8 to 10 lbs. brisket
Lots of sliced yellow onion
Garlic salt
Pepper
Hungarian paprika
packet of au jus sauce

Remove excess fat--leave a little. Season with garlic salt and pepper and cover with onions. Sprinkle Hungarian paprika over all. Put in roaster with tight fitting lid. Bake in oven at 300º. Takes 2-3 hours until fork slides in easily.

I cook brisket a day or two ahead of time. Put in fridge and save all liquid. Discard onions as they are not very good.

Slice brisket when cold otherwise it tends to fall apart. Make a packet of au jus gravy mix. Use the liquid from the brisket and add water as needed. It is a thin gravy and it may need to be thickened with a little flour. Do not make it a thick gravy. Put sliced meat in baking dish and cover with gravy. Cook at 325º until hot, about 30 minutes. Serve with buns and horseradish sauce.
