4 parsnips
onion
potato
2pt. chicken or vegetable stock
1 tbsp curry paste
nutmeg
salt and pepper

Directions:
Directions:
sweat the finely sliced onion till soft but not coloured.
peel and roughly chop potato and parsnips, add to onion.
add curry paste stir for a minute then add stock, season, bring to boil simmer gently till vegetbles are soft.
cool slightly then blend until smooth.
for added luxury add a dollop of cream or mascerpone cheese. sprinkle with grated nutmeg.
