11 ounce can mexi-corn (drained)
16 ounce can black beans (drained-may be rinsed)
2 ounces chopped pimento, not drained
6 medium green onions, sliced thinly
2 tablespoon corn oil
1 tablespoon cider vinegar
1/2 teaspoon ground cumin
1 dash of each salt & pepper
chopped cilantro

Directions:

Put all of the ingredients in a large bowl and mix well. It is ready to eat.

A good alternative to a green salad.
